Fashionably late to this appetizer party

Well, I’m a joiner.

I am participating in this really really good idea by Life In Grace and hopefully you’ll bear with me as I post a few good recipes for this little online shindig!

The first step is appetizers.

Right now the appetizer I really want an excuse to make and which also looks really easy is courtesy of my BFF Martha Stewart.

Drumroll please! Crispy prosciutto cups with pear. Hells yea. So easy.

And here’s the recipe from Everyday Food, December 2006.  

Ingredients

  • 3 ounces prosciutto, thinly sliced
  • 1 ripe Bartlett pear, finely diced
  • 1 teaspoon fresh lemon juice

Directions

Preheat oven to 375 degrees. Cut prosciutto into 24 two-inch squares. Place one square (overlapping any tears) in each cup of a mini cupcake tin. Bake until fat turns golden, about 15 minutes. Using a fork, immediately transfer to a paper towel to drain; cool completely. In a small bowl, combine pear and juice. Place 1/2 teaspoon mixture in each cup just before serving.

    Sounds good! I feel like I have yet to find good Prusciutto in OC… where do you get yours?
